Bacon Wrapped Liver
This works for little chicken livers, or pieces of beef/bison liver. Basically season liver with salt and pepper, and cayenne, pan fry until cooked, then wrap in a half slice of bacon. Stick in the oven under the broiler until bacon is crispy.
Alternatively, you can slice open a date, remove the pit, and stuff the cooked liver piece inside the date, and then wrap in bacon. Something about the sweetness of dates and bacon is really awsome. Originally I had bacon wrapped dates as a Tapas at a Mediterranean restaurant, then suggested it to my roomate at the time to make it with liver. It turned out just fabulous!
Pan fried Liver with Dipping Sauces
Pan fry your liver pieces, and then serve with various yummy sauces; pesto, mayonaise, horseradish, mustard, mushroom gravy.
Liver Pate
Pate isn't as hard as they make you think. We just cooked bison liver pieces with onions, mushrooms, oregano, salt, pepper, and beef broth. Then pureed the whole mess in the blender. Serve on toast, crackers or see below for new pate ideas!
Stuffed Mushrooms
Buy some nice mushrooms, take out the stem. Fill with prepared pate. Bake in the oven for 15 min, until soft. Pop into your mouth! Yum!!
Liver Pate Omelette
Make yourself a nice omelette and stuff it with sauteed mushrooms, onions, greens (chard or kale works well) and a couple of dollops of liver pate. This was really tasty!!
