4 Camping Recipes For Families

The Novotnys love to camp, and while camping this family of 7 loves to eat. So, I've been on the hunt for some new creative, yet simple camping recipes for our Summer camping trips.

Campfire Stew (also known as Hobo Packs)

Ingredients
2 lbs. ground beef
2 large onions, cut in pieces
potatoes, cut in chunks - as much as you like!
1 lb. baby carrots
salt and pepper
The Novotnys also add in zucchini squash along with some garlic seasoning.

Directions:Cut pieces of heavy duty aluminum foil for several packets. Make little balls of ground beef and place on foil. Add onions, potatoes, carrots, salt, pepper, and anything else you choose to include. Wrap up packets very tightly and place on grid over fire. They will take about 30 minutes or longer, depending on the fire.
You can save time by cutting up your veggies and potatoes at home before you leave!



Pita Pizza

Ingredients
4 pieces pita bread
2 cups pizza sauce (1/2 cup per pita)
2 cups mozzarella cheese, shredded (1/2 cup per pita)
Toppings of your choice: mushrooms, green bell peppers, pre-cooked sausage, pepperoni, etc.
Heavy-Duty aluminum foil
Directions: Slice pita bread three quarters of the way through. Spread pizza sauce on the bottom layer of the pita bread. Put in toppings and top with cheese.
Close pita and wrap with foil. Cook over coals until hot (approximately 20 minutes).





Simple Egg Dish
From:August 2008 Taste of Home Simple and Delicious magazine.

 It's a perfect egg dish for those camping adventures using your grill (gas or charcoal).
Ingredients:

6 eggs
1/3 cup milk
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese
1/4 cup chopped green pepper
4 brown-and-serve sausage links, chopped
4 bacon strips, cooked and crumbled
2 green onions, chopped

Directions:
Prepare grill for indirect medium heat.
In a small bowl, whisk the first five ingredients. Pour into three 4 disposable foil tart pans coated with cooking spray. Sprinkle with cheese, green pepper, sausage, bacon and onions.
Cover each pan with foil. Grill, covered, for 20-22 minutes or until eggs are completely set.

Yield: 3 servings

Apple S’mores

Ingredients:
1 roasted marshmallow
1 piece of chocolate candy bar (Hershey or Nestle Crunch are my favorites)
2 Slices of Granny Smith apples (thin slice your apple WHOLE)

Directions:
Roast one marshmallow, place it between two slices of apple along with a piece of chocolate and enjoy!

Camping Fun and Games For Families

Are you planning a family camping trip?  Plan ahead for some family fun with one or two of these Camping trip games or activities to create simple family memories.

Bubble Fun - Bring along the wands, bubble and buckets and allow your kids to spend hours blowing bubbles all ages enjoy this activity.  Get creative and have contest biggest bubble, smallest, most creative etc.

Domino's - Pick up an inexpensive set of Domino's and teach your family this good ole' fashion game.  There are a variety of games to play and are generally included inside your box of Domino's.  Click here for additional game instructions.

Exploring- Take a family day hike.  Ask the camp host or forest Rangers for hiking trail information.  Be sure to take a back pack wit water and snacks.

Game Of Cards - Card games are a well loved camping game and can become a family tradition for all ages.  Click here for fun Card game ideas and instructions.

Camp Fire Stories - Is someone in your family a great story teller?  Assign them the fun each night of telling an ongoing campfire story each night prior to bedtime.  Be sure it is suitable for all ages listening - unless you want little ones in your sleeping bag that night.  Another idea would be to read a book each night around the campfire.

Camp Fire Sing-along - Get out the guitar and start a campfire sing along.  Click here for lyrics to traditional campfire songs.

Where are we - Prior to leaving for your camping trip go a little research on the history and tourist attractions near your campsite.  Teach your kids something new about the area or terrain.

Cloud Watching -Remember when you were little and you would look into the sky and imagine the clouds were different animal or scenes? Grab a blanket place it out i an open area and lay down with your kids and imagine what the clouds could be.

Lawn Games - Camping is the perfect tie to teach your kids lawn games such as Bocce, Croquet, Frisbee, Croquet, Horse shoe, Ladder Golf, Capture the flag, Lawn darts.  Click here for ideas and instructions.  Also google Lawn Games for more ideas.

Outdoor Cooking- Camping is a great time to teach kids cooking.  So when making your camping meal plan think about a dish or two that you can have your children help you cook.  Try making Foil packet meals that all ages can participate in creating.

Skits - Have a skit night where everyone breaks in to groups and comes up with camp skits.  You could plan ahead with ideas and scripts for those that have never participated in camp skits.

Camping in Style

Camping is one of my favorite things to do every summer.  Now, I am not the kind of person to "rough" it.  I need my showers and toilets.  We use to tent it.  Then we upgraded to a tent trailer.  Finally we got a motorhome.  It is an older one but it gets us there (knock on wood).  We don't spend much time in it but I do enjoy having a toilet, AC, TV, beds, fridge... and all the little stuff.    However,  we did just fine with out all of that.  I want to share with you some of my secrets and tips with all of you....   make your camping experience a successful one where you and your family will want to do it every year.  Not only that but the other campers around you will be walking by your camp spot admiring your site.   Yes...  it is true...  when I go camping we have people just walk by to see our site.  Can't miss it at night.  Lights up the whole campground.  :)  You don't even need to be hooked up to any electricity!!

My MUST Haves:
- Tiki Torches (funnel & tiki fuel).  Burn those bugs away, light up your campsite and feel like your in Hawaii.   You can't go wrong!

- Battery Operated Strand of Lights (plug in if you have electricity).  You can find these lights during any holiday season.  Usually have the most during Christmas.  You can even use Solar Lights but I notice they don't produce enough light.  Also make sure they are LED.  They last a LOT longer and are brighter.  Hang these from the trees, inside your tent, on your shelter.  You wont need a lantern and bugs aren't attracted to them.

- Radio (we use a wind up radio that you can find at almost any camping store... also works great when power goes out at your home)

- Solar Path Lights(that you put in ground).  You can buy these at Target, Walmart even the Dollar Store carries them now.  These are wonderful to guide you to your tent.  Use them all around your camp area.  They don't put out much light but you can see where you are walking and don't take up much space.

- Table Cloth & Bench Cover.  You don't know who and what has been on that table and bench.  Protect it all!  Table clothes you can get anywhere.   By an extra one and cut in half (length wise) use the same clips that you use for the table to hold it down on the bench for the seats.  Now your tushy is protected.

- Plastic Mesh Net (approx 2-3 feet height) & Wood Stakes.  If you have young kids sometimes it can be hard to keep track of them.  They are little explorers.  I have learned over the years to make it easier on us is to trap them in.  We start by placing stakes around the area that they can escape (about 5-8 feet apart) then put make a fence with the mesh net.  This is also a great place to hang battery operated lights from.  :)  It is also nice cause people can't just walk into our area too.  You can get the mesh net at any home improvement store.  Try not to get the construction safety orange though unless you really want to STAND out. 


- Kids Stuff..  Glo Sticks, Crafts, Bikes, Buckets/Shovels, Kites & Balls.   Don't want them to get bored!!  I really do recommend the glo sticks.... they are such a life saver at night time.

- Awning/Shelter.  No matter where you go... cold or hot... wet or dry... you should always have a shelter of some type.  Also bring along at least one tarp for emergency cases. 

- Prepare your Food Ahead of Time and Freeze IT!  If you can pre-freeze your food it will keep other food in the cooler colder longer.  Which means less trips to go get ice.  Some of the things that I make ahead and freeze to take is....   Marinated chicken, spaghetti & steak.  Now I do set up a kitchen outside... I do not cook over the fire unless its smores, little smokies or biscuits on a stick.  :) 

- Organize Your Picnic Table.  Put a basket filled with all the necessities.  Hand sanitizer, Sun screen, Bug killer, Bug anti-scratch ointment, Clorox wipes & Salt&Pepper. In the middle of your table.   

- Smores Basket.  Keep all your smores fixings in a basket. Put your marshmallows and graham crackers in large zip lock bags to keep fresh and moisture out.  Also, add small paper plates, small thing of baby wipes and napkins.  Every night you just pull out your basket and you are ready to go!

- Floor Mat & Rugs.  You can buy outdoor rugs for camping at any home improvement stores or camping stores.  They are great for those little ones who like to go barefoot.  Also keep a small mat in front of your tent or entrance to your trailer.

Optional:
- Dry Ice.  If you are going somewhere hot.  Bring a smaller cooler with dry ice(wrap in newspaper) and pack some Popsicle's.  They will last you a couple of days. 

- Portable DVD Player.  Can be hard for kids to take their naps or go to bed because they are out of their normal surroundings.  Bring along a portable DVD player so they can watch a movie to make them sleepy.

- Battery Operated Fan.  We have a few of these.  These were great when we used a tent or our tent trailer.  We even use it in our motorhome when we are driving and the kids get too hot. 

- Food Net Cover.  Keep those little pests away.  You can get these food net tents at lots of stores...  Dollar Tree, Target, Joann's or any camping store. 

- Pre-cut Veggies & Dip.  When you camp it seems like we are always wanting to snack.  I bring a huge Tupperware full of precut veggie and dip.  Everyday we are pulling that out multiple times snacking on it.  Much better then chips.

- Container of Change.   Don't forget about taking a shower....  most need quarters. 

Camping can be a lot of fun but  I have learned that you need to be organized for a relaxing trip.  You have kids now... you can't just wing it.  :)  Most important...  remember your camera.  Take lots of pictures...  your family will remember these camping trips but its always fun to look back at all the pictures of your trips!!

MOM Tip - Camping Storage Containers For Kids


MOM Tip- Keep your kids organized on your next camping trip by assigning each kid a storage container to keep all of their clothes and belongings in. Use a 5-10 gallon snap on lid bucket. These stack up easily outside of your tent and keep things dry they can also be used as campfire stools. You can even allow them to decorate their bins with colorful permanent markers.

Portable Spice Kit For Travel or Camping

Today's DIY project at The Handy Hausfrau is a portable spice "rack."

We have a second home (a ski condo in the mountains) and I am constantly filling up Ziplock bags with various spices for cooking. Why don't I just leave the spices up there? you ask. We rent the condo out and on more than one occasion, I've searched for my crushed red pepper, only to find that a renter used the last of it on his pepperoni pizza slice. To solve my problem (and to be a little more kind to the environment), I created this Portable Spice Kit.

It's only 6 inches x 1.5 inches and it easily fits in any tote bag or suitcase that I'm lugging back and forth. It would be the perfect gift for the frequent traveler* or an outdoor lover who spends their time camping, but doesn't want to give up the luxuries of cooking with spices.

*I would check with the airlines to see if you can carry on spices. Not sure of the current regulations for powdery substances on flights.

To create this project, head to your local Walgreens, CVS or other drug store. I perused the racks until I found the section for the 7-Day Vitamin/Medication Containers. They had two sizes, and in my case the $2.99 (Large) size was perfect for what I needed.

Notice the little key in the upper right corner of the package? This indicates a locking mechanism - great for ensuring that your cayenne pepper doesn't end up popping open in your backpack - creating a week's worth of flourescent orange underwear.


When you open it up, you'll notice that each day's lid also has raised dots on the corner - braille to indicate the day for the visually impaired. For our purposes, the braille will get in the way.

Find your strongest pair of nail clippers and get to work clipping those dots off. Place the clippers as close to the surface as possible to remove as much of the raised plastic as you can.


Then get our your emery board (or buy a pack of the cheapies for $0.99) and get to work sanding the lids to a smooth finish. You could also use sandpaper for this, but I was too lazy to walk to the garage to get some. The emery board worked perfectly.

This is what the lids will look like when you're finished. Don't worry about the scratches. Your labels will cover this right up.

Now comes the fun part. I found vintage spice and canned vegetable labels and adapted them in Photoshop so that each would contain the name of one of my chosen spices. My seven containers hold: Cinnamon, Cayenne Pepper, Crushed Red Pepper (can you tell that we like spicy food in our family), Oregano, Ginger, Dill and Garlic Salt. You could definitely find your own and adapt them for your use, or feel free to download my complete PDF file here. Print the file out on 8.5"x11" full sheet labels. You'll see that the file prints with trim lines already in place. (If you're using my file, you'll need to find a vitamin container with lids that are 5/ 8"(w) x 1"(h) to ensure proper fit of the labels.)

Get our your straight-edge and Exacto knife and trim each label to size.
Apply the labels carefully. Make sure that they are fully adhered or the paper will bubble and curl when you apply the Mod Podge. Here's what it will look like with all of your labels in place.


Cover each label with two generous coats of Mod Podge to seal the lids.


Allow it to dry thoroughly. (You can see that "Ginger," in the foreground, started to bubble after the Mod Podge was applied. Just push the bubbles down gently with your finger nail and reapply another coat of Mod Podge to remove any fingerprints.)

Here's a close-up of the final product after the Mod Podge is dry.

Pop open those lids and fill with your favorite spices. Each container is big enough to hold approximately 2 teaspoons of each spice. Not enough to season a whole vat of stew, but enough to makes sure that two boys have cinnamon toast for breakfast and Mommy gets her salmon seasoned just right!

Apple S'mores - Summer Treat


Apple S’mores is one of my favorite summertime treats. As you know, I am a chocoholic and enjoy mixing healthy fruit with it any chance I can.
