5 Gobble It Up Leftover Turkey recipes

Turkey Pot Pie

Prep Time: 15 Min Cook

Time: 45 Min Ready

In: 1 Hr

Ingredients

  • 2 (9 inch) unbaked pie shells
  • 1 (10.75 ounce) can condensed golden mushroom soup
  • 1 cup cooked, chopped turkey meat
  • 1 (10 ounce) can mixed vegetables, drained
  • 1/3 cup milk

Directions

1.Preheat oven to 400 degrees F (200 degrees C). Place one pie crust in an ungreased pie dish.

2.In a medium bowl, mix the mushroom soup and milk. Stir in the turkey meat and mixed vegetables. Pour the mixture into the pie crust in the dish. Top with the other pie crust, and seal the crust edges by crimping with a wet fork.

3.Bake in the preheated oven 45 minutes, or until the crust is golden brown




Cindy's Turkey Salad

Prep Time: 15 Min Ready

In: 15 Min

Ingredients

  • 5 cups cooked turkey meat, chopped
  • 1 cup finely chopped celery
  • 1 fresh jalapeno pepper, diced
  • 3 tablespoons sweet pickle relish
  • 1 cup mayonnaise
  • 1 tablespoon dried cilantro
  • 2 teaspoons salt
  • 2 teaspoons pepper

Directions

1. In a bowl, mix the turkey meat, celery, jalapeno, relish, and mayonnaise. Season with cilantro, salt, and pepper. Chill in the refrigerator until serving.



Tex-Mex Turkey Soup

Prep Time: 10 Min Cook

Time: 40 Min Ready

In: 50 Min

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup minced onion
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 4 cups water
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 (28 ounce) can diced tomatoes
  • 1 cup salsa
  • 4 cups shredded cooked turkey
  • 1 tablespoon dried parsley
  • 3 chicken bouillon cubes
  • 1 (14 ounce) can black beans, rinsed, drained
  • 2 cups frozen corn
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

  • Toppings:
  • 6 cups corn tortilla chips
  • 3/4 cup chopped green onion
  • 1 cup shredded Cheddar-Monterey Jack cheese blend
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup sour cream

Directions

1. Heat olive oil in a large saucepan over medium heat. Add minced onions and cook until onions begin to soften, about 4 minutes. Add garlic, chili powder, cumin and oregano and cook, stirring, for 1 minute.

2. Stir in water, tomato soup, diced tomatoes, salsa, shredded turkey, parsley and bouillon cubes. Bring to a boil, then reduce heat, and simmer 5 minutes or until bouillon cubes dissolve. Add black beans, corn, sour cream and cilantro. Simmer for 20 to 30 minutes.

3. Serve soup with crushed tortilla chips, chopped green onion, shredded cheese and additional cilantro and sour cream.



Thanksgiving Leftover Casserole

Prep Time: 20 Min Cook

Time: 55 Min Ready

In: 1 Hr 15 Min

Ingredients

  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon onion powder
  • 2 tablespoons butter
  • 1 cup finely crushed herb-seasoned dry bread stuffing mix
  • 1 cup cooked, diced turkey meat
  • 1 cup shredded Cheddar cheese
  • 2 cups leftover mashed potatoes

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

2. Melt 3 tablespoons butter in a saucepan over low heat. Blend in the flour. Slowly stir in evaporated milk and water, then season with salt, pepper, and onion powder. Stir sauce over low heat for 5 minutes.

3. In a separate saucepan over low heat, melt 2 tablespoons butter. Blend in the dry stuffing mix. Place the turkey in the prepared baking dish. Pour the sauce over turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.

4. Bake 45 minutes in the preheated oven.




Cuban Midnight Sandwich

Prep Time: 20 Min Cook

Time: 5 Min Ready

In: 25 Min

Ingredients

  • 1 cup mayonnaise
  • 5 tablespoons Italian dressing
  • 4 hoagie rolls, split lengthwise
  • 4 tablespoons prepared mustard
  • 1/2 pound thinly sliced deli turkey meat
  • 1/2 pound thinly sliced cooked ham
  • 1/2 pound thinly sliced Swiss cheese
  • 1 cup dill pickle slices
  • 1/2 cup olive oil

Directions

1. In a small bowl, mix together mayonnaise and Italian dressing. Spread mixture on hoagie rolls. Spread each roll with mustard. On each roll, arrange layers of turkey, ham, and cheese. Top each with dill pickle slices. Close sandwiches, and brush tops and bottoms with olive oil.


2. Heat a non-stick skillet over medium high heat. Place sandwiches in skillet. Cook sandwiches for 2 minutes, pressing down with a plate covered with aluminum foil. Flip, and cook for 2 more minutes, or until cheese is melted. Remove from heat, place on plates, and cut in half diagonally.

*Simple Turkey Cookies

from Pillsbury


INGREDIENTS
1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies or 1 package (16 oz) Pillsbury® Ready To Bake!™ refrigerated sugar cookies (24 cookies)
1 container (16 oz) chocolate creamy frosting
Candy corn
Orange decorating icing
Black decorating gel
Miniature candy-coated chocolate baking bits

DIRECTIONS
  • 1Bake cookies as directed on roll or package. Cool completely, about 10 minutes.
  • 2Spoon chocolate frosting into 1-quart Ziploc® Brand storage bag; seal bag. Cut off tiny bottom corner of bag. On each cookie, pipe frosting on outer edge of half of cookie. Arrange candy corn over frosting for feathers.
  • 3Pipe orange icing onto each cookie to resemble turkey face and feet. Use orange icing to attach baking bits to turkey face for eyes. Pipe black gel on baking bits for centers of eyes.

* Turkey Cupcakes

Ingredients

  • 24 frosted cupcakes ( chocolate frosting)
  • 24 Nutter Butter cookies
  • 2-3 tablespoons of white frosting or decorator's gel
  • Mini baking bits or chocolate chips or pre-made frosting eyes.
  • Fruit by the foot various flavors and colors
  • toothpicks
  • Fall sprinkles

Instructions
  1. To make each turkey, press the lower portion of a Nutter Butter cookie into a frosted cupcake for the bird's head.

  2. Use tiny dabs of frosting to stick on baking bit eyes and a red fruit by the foot wattle.

  3. For each turkey's tail, use a butter knife to cut out a dozen feather shapes (about 6 inches long) from fruit by the foot.

  4. Lay each of the feather shapes on a flat surface and place a wooden toothpick lengthwise atop each so that one end of the toothpick extends about an inch below the feather. Fold the fruit by the foot over the toothpick sandwiching the toothpicks between it.

  5. Press the 2 layers together to make them stick, then fringe the edges of the feather with a butter knife. Now your child can stick the colored feathers into the cupcake behind the cookie head. . ( shape as needed - I used scissors)

* Pilgrim Hats


Ingredients

Marshmallows

Yellow decorative icing in tube (not gel)

Chocolate wafer cookies or Fudge striped cookies

Milk chocolate chips or Chocolate bark

Toothpicks


Direcions

Melt the chocolate in a microwave safe bowl. 15 seconds at a time... stirring in between. Don't over cook it or it will dry out and taste burnt. Lay the cookies out on a cookie sheet. If using fudge striped cookies place the striped part on the bottom. Place one toothpick in the end of the marshmallow. Dip the marshmallow holding the toothpick into the chocolate. Make sure the whole marshmallow is covered with chocolate. With another toothpick take off the marshmallow from the original toothpick and place on the cookie. when the chocolate hardens it will stick to the cookie. Then using the yellow frosting you can then make the buckle. You could also use black frosting to make a band around the marshmallow and then make the buckle over it. Refrigerate until use.

* Mini Pumpkin Cupcakes


Ingredients


Store bought mini cupcakes already frosted in orange or

Make you own mini cupcakes and frost in orange

Orange colored sugar

Green fruit roll-ups

Scissors


Directions


Take the frosted cupcake (doesn't matter if store bought or if you frost your own)... roll the tops of the cupcake in the orange colored sugar to completely cover the frosting. Unroll a green fruit roll-up. To make the stems, use the scissors to cut a rectangle about 1 ½ by 1 inch. Starting at a short side, roll stems and set aside. Snip strips from the green fruit roll-up about ¼ inch by 2 ½ inches. Twist and curl the strips and place on the cupcakes, securing one end at the center by pressing a stem into the cupcake.

* Acorn Kisses


Ingredients

Chocolate Kisses

Chocolate frosting (out of can ok)

Vanilla wafers


Directions

Put a little dollop of chocolate on kiss and adhere the wafer. When you have finished doing all the acorns then make the stem. Take a small zip lock bag and put some of the frosting in it. Snip a tiny hole at one of the ends. Make a little dollop of chocolate in middle of wafer and slowly pull away to make the stem. * Butterscotch Fudge


Ingredients

1 can (14 oz) sweetened condensed milk

1 package (12 oz) butterscotch chips

1 1/2 cups of mini marshmallows

2/3 cup peanut butter

1 teaspoon Vanilla

1 cup chopped salted peanuts


Directions

In a microwave safe bowl combine the milk, butterscotch chips and marshmallows. Microwave uncovered at 80% power for 3 minutes or until chips and marshmallows are melted, stirring frequently through out the 3 minutes. Stir in peanut butter and vanilla until combined. Fold in the peanuts.

Pour into a 11 x 7 inch pan coated with non-stick spray. Cover and refrigerate for 2 hours or until firm. Cut into squares. Store in refrigerator.

* Easy Oreo Turkeys


Ingredients

(per turkey)

2 Oreo's

1 Malt Whopper ball

5 Candy Corn

small tube of black icing/frosting


Directions

Take apart one of the Oreo's so that all of the cream is on one side of the cookie... that is the base. Next take the whole Oreo and place some of the frosting on bottom and stick to the white sided base. Then add the whopper ball adding a dollop of icing to hold in place as well. Take 4 of the candy corn and put dollop of icing on white tips and stick in middle of Oreo. For the nose cut off the yellow portion of candy corn and stick on whopper holding it with a little bit of frosting. Add the eyes with black frosting dots.

On this day people express gratitude to God for his blessings and give thanks to dear ones for their love & support. Feasting with family is an integral & most delightful part of Thanksgiving Day celebrations. Making family traditions shows just another way to bond with your family and friends. Your children will remember these traditions and perhaps keep them going or start new ones when they have their own children.


5 FUN Tradition Ideas

1. Turkey Tablecloth:

Create a Thanksgiving Day tablecloth that will be enjoyed by generations of your family.

You need:

a plain tablecloth (prewash before decorating)

fabric paints

fabric markers

foam paint brushes

Each year, have guests -- yes, even Great Aunt Joanna -- use the paint to make a handprint turkey on the tablecloth.

They can then draw in the turkey's features and write their names and ages with fabric markers.

The entire family will enjoy seeing the tablecloth grow from year to year and watching as the little turkeys grow into big turkeys.

2. Thanksgiving Album:

Take photo's of all of your Thanksgiving Day guests. Put the photo's in a scrapbook with the heading "Thanksgiving 2010." Then you can add the menu and could include any new recipes that you liked. On another page, you can ask everyone to sign their name and then write a few lines about what they are most thankful for that year. Each year you can add new pages as your family grows.

This activity will not only create a cherished heirloom filled with the handwriting of generations gone by, but it encourages guests to remember the true meaning of the day -- giving thanks for the blessings in their lives.

3. Thanksgiving Slide Show:

Another great way to show off previous Thanksgiving's is to make a slideshow. Have it displayed on a TV in your house that your guests aren't going to be watching football or parades on. Could be even a small TV in your kitchen, or office. You could even just have it on your computer to display. Add graphics, music and pictures from previous Thanksgivings.

4. Christmas Ornament:

After dinner... everyone decorate (paint) a Christmas ornament. Wood or Ceramic that you can pick up at the craft stores Christmas section.

What you need:

Enough ornaments for everyone (you will be surprised how adults enjoy painting them too)

Craft paint

Paint brushes for everyone

Newspaper to lay down

Small paper plates to let the ornaments dry on

5. Hunt for Turkey Feathers:

Buy some colorful feathers at a craft store. Hide them in your house or outside and have the kids look for them. Just like a Easter egg hunt.

What you need:

Colorful feathers (you can find at your local craft store)

* Hide the feathers around the house. Make a note of how many feathers you have hidden for your kids to find so you know when he/she has collected all of them.

* Explain to your kids that Tyler turkey has lost his feathers and needs your their help to find them for Thanksgiving.

* Ready. set. Go... off your kids go to hunt for Tyler's turkey feathers. Help your kids as needed

* After your kids have found all the feather, let them "play" with them... counting colors, feeling how soft they are.

1 Corinthians 13 - Holiday Version




As we begin to prepare for the holidays, I thought I would share one of my favorite versions of 1 Corinthians 13. I hope this is a good reminder to Simplify our holidays and never forget what we are celebrating.



If I decorate my house perfectly with plaid bows, strands of twinkling lights and shiny balls, but do not show love to my family, I'm just another decorator.

If I slave away in the kitchen, baking dozens of Christmas cookies, preparing gourmet meals and arranging a beautifully adorned table at
mealtime, but do not show love to my family, I'm just another cook.

If I work at the soup kitchen, carol in the nursing home, and give all that I have to charity, but do not show love to my family, it profits me nothing.

If I trim the spruce with shimmering angels and crocheted snowflakes, attend a myriad of holiday parties and sing in the choir's cantata, but do not focus on Christ, I have missed the point.

Love stops the cooking to hug the child.
Love sets aside decorating to kiss the husband.
Love is kind, though harried and tired.
Love doesn't envy another' s home that has coordinated Christmas china and table linens.
Love doesn't yell at the kids to get out of the way, but is thankful they are there to be in the way.
Love doesn't give only to those who are able to give in return but rejoices in giving to those who can't.
Love bears all things, believes all things, hopes all things, endures all things.
Love never fails.

Video games will break, pearl necklaces will be lost, golf clubs will rust. But giving the gift of love will endure.

Our family Boo's for Halloween and Eggs for Easter and now we are Popping for Thanksgiving.

Easy Elegant Thanksgiving Appetizers

* Cranberry Crostini


What you need:

1 French baguette

1/2 cup melted butter

Salt and pepper

1 cup blue cheese crumbles

1 cup sundried cranberries or cherries

1 cup toasted walnuts (coarsely chopped)

Heat oven to 350'. Place walnuts on a baking sheet and bake for about 10-15 minutes. Let cool. Slice baguette 1/2 inch slices. Place on baking sheet and brush butter on tops of them. Sprinkle with little bit of salt and pepper. Bake for 10-15 minutes or until golden brown. Take out and let it completely cool. Combine in bowl... Blue cheese, cranberries or cherries and the toasted walnuts. Mix and spoon onto the baked baguette. Serve at room temperature.

* Cranberry Chutney Spread


What you need:


1 (12oz) bag of fresh or frozen cranberries

1 apple, chopped

1 1/4 cups of sugar

3/4 cup of water

2 teaspoons of cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1 block of cream cheese (room temp)

In a saucepan combine all ingredients except the cream cheese. Bring to boil stirring occasionally. Reduce heat and simmer for about 20 minutes. Cool completely. Poor over cream cheese and serve with crackers. You can make this ahead of time and keep in fridge.

* Asparagus w/ Prosciutto


What you need:

Asparagus spears

Prosciutto (thinly sliced)

Just wrap a slice of prosciutto around the asparagus. No dip needed and these are yummy!

* Sweet and Savory Meatballs


What you need:

1 Frozen bag of meatballs

1 jar of Chili Sauce

1 jar of Grape Jelly

Place all in Crockpot. Now that is easy! Your guest will love these. Double the recipe if there is going to be more then 10 people.

* Stuffed Cherry Tomatoes


What you need:

1/2 lb of bacon cooked and finely chopped

1/4 cup mayo

3 oz of cream cheese softened

1/4 cup green onion finely chopped

1 teaspoon parsley (dry) or 1 tablespoon of fresh

2 dozen cherry tomatoes

Rinse the tomatoes. Cut a thin slice off of the bottom so they stand up with out rolling around. Cut off other end (on which you will fill these). In a bowl mix together everything. Place in large zip lock bag. Snip off corner of it and fill into the cherry tomatoes. You can decorate the top with a slice of green onion or sprinkle of paprika.

* Antipasto Platter


What you need:

This you can pretty much put what you want. Here are some ideas...

Marinated; Mushrooms, Baby Corn, Peppers, Olives, Asparagus, etc...

Meats; Salami, Pepperoni, Diced Ham

Cheese; Mozzarella, Cheddar, Swiss, etc...

Bread sticks or Baguette

Cheese and Meats can be cubed or thinly sliced and rolled. You can't go wrong with this. There is usually something for everyone on this platter.
